From goodreads: In EAT TO LIVE, Dr. Fuhrman
offers his healthy, effective, and scientifically proven plan for
shedding radical amounts of weight quickly, and keeping it off. Losing
weight under Dr. Fuhrman's plan is not about willpower, it is about
knowledge. The key to this revolutionary diet is the idea of nutrient
density, as expressed by the simple formula Health=Nutrients/Calories.
When the ratio of nutrients to calories is high, fat melts away and
health is restored. Losing 20 pounds in two to three weeks is just the
beginning. The more high-nutrient food Dr. Fuhrman's patients consume,
the more they are satisfied with fewer calories, and the less they crave
fat and high-calorie foods. Designed for people who must lose 50 pounds
or more in a hurry, EAT TO LIVE works for every dieter, even those who
want to lose as little as 10 pounds quickly. No willpower required-just
knowledge.
I found this book listed on a MS website resource page. I may not have read it otherwise, since it looks like a book dedicated to weight loss. I wasn't looking for a new diet, I was looking for information and facts on how to prevent and reverse disease. And boy, did I find it in this book! Eat
to Live has changed the way I look
at food. This book examines the
American diet and exposes it to the truth it really is.......disease
causing. I love the knowledge I gained from this book. It includes
basic
nutrition information and provides summaries of medical/health studies
to help educate and provide motivation to eat healthy. And I love the getting started guide and the recipes. I have tried them all, and they are filling and delicious.
A couple of quotes I loved from the book are: "If we don't make significant changes in the foods we choose to consume, taking drugs prescribed by physicians will not improve our health or extend our lives. If we wish true health protection, we need to remove the cause. We must stop abusing ourselves with disease-causing foods."
"There is no magic. There is no miracle weight-loss pill. There is only the natural world of law and order, of cause and effect. If you want optimal health and longevity, you must engage the cause."
In one month, I read this book, The China Study, and watched the documentary Forks Over Knives. This book helped me to drastically change my eating habits. I thought I ate fairly healthy, but this book helped open my eyes to see I am not getting adequate nutrition. While I don't think I will cut animal products completely out of my diet, I have been eating mostly vegetarian for the last four weeks, and have felt so much better! The knowledge I gained from this book has been motivating and empowering.
